‘Gypsy’ is a classic Blanc de Blancs style, with a pale straw colour (with a hint of green apple), fine mousse and gentle characteristics of citrus. A splendid wine for celebration, Gypsy is also a versatile wine, try with oysters or anything else that takes your fancy. Serve chilled.

Gypsy is made using homegrown organic Chardonnay, which is picked early to get some lovely fresh green apple characters and pressed off skins for cool fermentation in stainless steel. Like a well-bred English girl of yesteryear, Gypsy is sent off to finish school in the Barossa (not Switzerland in this case) to find her fizz, before coming home to be presented to polite society for all to see and admire in her gorgeous packaging.
