Sourced from two vineyards at opposite ends of Adelaide Hills, this wine captures the unique terroir of each location. Kersbrook, in the north, boasts a cool and dry climate with east-facing slopes and shallow loam soils, ideal for cultivating old vines that produce small, intensely flavored bunches with soft tannins. Meanwhile, Kuitpo, located in the extreme south, benefits from sunny days and cool nights, allowing for even ripening.
Crafted to maintain its freshness, the wine undergoes fermentation in stainless steel to preserve its characteristic spice and tropical fruit notes. A four-month aging period on fine lees after fermentation elevates the wine's smooth texture, complementing the natural acidity of its fruit profile. Hints of nuttiness and floral notes from the lees add to the wine's refreshing and delicate flavor profile.
