Grapes from the cool sub-region of Blewitt Springs in the Beresford Estate Vineyard were harvested separately based on flavor and tannin ripeness to ensure the freshness of the ingredients. Sweet dark ripe fruits such as blackberry and blackcurrant notes are accompanied by complex mulberry and raspberry flavors and an herbaceous lift. Further complexity is added through a 20% portion of the blend which has been aged in seasoned American oak hogsheads and 30% in 3-year seasoned French oak hogsheads, while the remaining 50% has been matured in 2 and 3-year-old French oak hogsheads.
