Don Tacho, a maestro mezcalero in Santiago Matatlan, Oaxaca, produces 400 Conejos Espadin Joven. This mezcal is traditionally made with agave Espadin, which are harvested when 8-10 years old. Its production uses a stone oven (horno), a horse-drawn tahona, and copper distillation.
